Lovely Lavender Biscuits

It’s that time of year again when bees are buzzing and the gentle scent of lavender lingers in the summer air. As you may know lavender possesses lots of wonderful natural goodies - perfect for home remedies and recipes. And just like the bees and other pollinators, we absolutely love it!

Lavender contains a property that interacts with the GABA neurotransmitter in your body, reducing the neuron firing and calming the brain and the central nervous system. It is this magical property that reduces anxiety and has a sedative-like ability. It can calm down anger, irritation, anxiety and even pain. Like you’d need any other reason to try these tasty little cookies.

This lavender cookie recipe is the height of summer sophistication. With a soft and crumbly texture, and subtle vanilla tones under the sweet floral taste of lavender, these cookies are a real treat day and night to relax and unwind. Bonus: This recipe is an eggless cookie recipe and a butter substitute can also be used, making it vegan friendly! Vegan Lavender Cookie Recipe Ingredients: 2oz Caster Sugar 4oz Butter or alternative 6oz Flour 2Ts Dried Lavender 2Tb Water A few drops of Vanilla Essence Method:

1.) Preheat the oven to 180 degrees (160 degrees fan).


2.) Cream the butter and sugar together in a bowl.


3.) In a cup, pour roughly two tablespoons of hot water over dried lavender and allow to steep. After about 3 minutes and once the mixture has cooled it will be ready to use.


4.) Add and stir in the sifted flour gradually. When the mixture becomes dry, add in the 2 tablespoons of lavender water and vanilla essence/extract. If you would like a stronger lavender flavour, scoop in the lavender flowers from the brewing stage.


5.) Add the remaining flour and continue to stir until everything is mixed in.


6.) Scoop out the mixture onto a baking paper lined oven tray into the desired sizes - two tablespoons is perfect size for me.


7.) Place the cookies in the oven for about 12 minutes, checking to see if they are golden brown and use a cocktail stick to see if the mixture has cooked in the middle. Allow to cool and enjoy!

I enjoy my lavender cookies as a bedtime snack alongside some herbal tea or warm with a scoop of vanilla ice cream as a summery dessert. This cookie recipe is a very simple one that can be used for a wide range of ingredients. If you are adding liquid like in this recipe, expect a wetter, almost batter like mixture to scoop onto a baking tray. If you leave out the vanilla or use drier ingredients, the mixture will be firm enough to roll and shape in your hands like cookie dough. The drier the mix, the less time it will take to cook so keep a close eye on them!
